Massaged Kale Salad

1 kale leaf, bunch
1 lemon, juice and zest
walnuts, toasted and chopped
( 1g) parmesan cheese, grated
( 15g) olive oil
Toast the walnuts in a skillet or toaster oven. (Baking in a toaster oven for
Wash and stem the kale leaves.
Chiffonade (or chop into small pieces) the kale leaves.
Add the olive oil.
Juice and zest the lemon, removing seeds. Add zest and juice to the kale.
Massage the mixture gently with clean hands, or use a wooden spoon. Set aside.
Grate the parmesan. Chop the walnuts.
Add walnuts, parmesan, and salt and pepper (to taste).
Toss and serve.
Notes: some stores (BJ's, Whole Foods) sell pre-chopped, pre-washed kale to make this easier.
