Indian Chickpeas

• Ingredients
• chickpeas
• vegetable oil
• 1 onion
• garlic
• fresh ginger
• coriander
• cumin
• garam masala
• pepper
• tomatoes
• sea salt
• coconut milk, unsweetened
• fresh cilantro
• Recipe
• Heat the oil or ghee in a saucepan over medium heat. Add the onions, garlic, and ginger, and saute until softened, about 5-8 minutes. Add the spices and saute for 1 minute. Reduce the heat to medium-low. Add tomatoes and salt and simmer gently for 30 minutes. Add the chickpeas and coconut milk. Increase heat to medium and simmer until heated through, about 5-8 minutes. Serve with vegetable biryani or basmati rice. Garnish with cilantro.

• 1 cup coconut milk, unsweetened
• 2 tbsps fresh cilantro, chopped
