Italian "Nothing" Cookies

• almond extract
• 5 eggs
• baking powder
• flour
• canola oil
• sugar
• Recipe
• Beat eggs. Add sugar and oil. Mix well. Add baking powder and almond extract, and mix. Add flour, one cup at a time until sticky. Pour flour on table/board, and knead until smooth OR knead using dough hook, adding flour bit by bit, until dough is smooth. Slice dough in 1-inch cubes, and roll cubes to 1/4-inch snakes. Fold each snake in half and twist each one. Bake at 350 degrees for 13-15 minutes, until edges are slightly golden. Yield: 3-4 dozen. This recipe originally calls for lemon extract. The name Nothing Cookies was coined by young Christine. The original recipe comes from Lillian Paglia, and the present recipe was recited from memory by Louise Paglia.
