Spring Asparagus Pancetta Hash

In a medium frying pan over medium heat, fry for
Remove with a slotted spoon and set aside, leaving the renderings over the heat. Add to the pan:

Let the potatoes sit for a few minutes to brown, then begin flipping and turning them to brown evenly. Add vegetable oil if necessary.
, when the potatoes are three-fourths as crisped and brown as you want, add:
1 yellow onion, chopped small

Cover the pan and cook for
