Baked Macaroni and Cheese

• Ingredients
• macaroni
• butter
• flour
• mustard powder
• milk
• salt
• pepper
• onions
• cheddar
• bread crumbs
• Recipe
• Cook just until al dente, then toss with butter or oil and set aside:
• 2 cups macaroni, (1 box)
• Meanwhile, assemble the following ingredients for the cheese sauce.
• In a large saucepan over medium heat, melt:
• 6 tbsps butter (84g)
• When the butter is melted, stir in:
• 6 tbsps flour (48g)
• 1 tbsp mustard powder, sifted
• Cook for 2 minutes stirring constantly, then gradually stir in:
• 4 cups milk (960g)
• Cook, stirring constantly, until the sauce thickens. Add:
• 1 tsp salt
• ¹/₄ tsp pepper
• ¹/₂ cup onion (70g), finely minced
• Cook another few minutes, then stir in:
• 4 cups cheddar (448g), grated (16 oz)
• When the cheese is melted, combine with the cooked macaroni and pour into a greased casserole dish. Cover with:
• 1 cup bread crumbs
• Bake for 30 minutes, then let stand for 5 minutes before serving.
