Kheera ka Raita

Combine in a large bowl:
1 cucumber, peeled, seeded and grated
( 9g) onion, finely chopped
Stir well and let the mixture rest for
to draw out excess water, then drain in a sieve or colander.
Combine the mixture in a serving bowl with:
1 tomato, seeded and diced
( 227g) yogurt
Heat a small skillet over high heat, then add and stir constantly until slightly browned and fragrant:
Stir the toasted cumin into the yogurt mixture. Top with:
coriander, chopped and fresh (optional)
Serve immediately or refrigerate until ready to serve. Keeps for several days.
