Place in a bowl and cover with hot water to a depth of 2 inches:
bulgur (cracked wheat)
Let sit for about
, until firm but chewy. Drain in a sieve or colander.
3 tomatoes, medium sized, chopped
( 140g) onion, chopped
Combine with the soaked bulgur in a large bowl and toss gently. Just before serving, add:
( 30g) olive oil
dried mint, or 2 tbsp. chopped fresh mint
Serving suggestion: with lamb.
