Mandel Bread (Biscotti)

• 3 eggs
• water
• sugar
• canola oil
• flour
• baking powder
• vanilla extract
• almonds
• Recipe
• 3 eggs
• 1 tbsp water (8g), warm
• ³/₄ cup sugar (158g)
• ²/₃ cup canola oil
• 3 cups flour (384g)
• 1 tsp baking powder
• 2 tsps vanilla extract
• 1 cup almonds, slivered
• Beat eggs with water until foamy. Add sugar and vanilla and beat well. Add oil. Add dry ingredients. Fold in almonds. Shape into 3 long strips on 2 greased cookie sheets. Bake for 20-25 minutes. Remove from oven and slice diagonally into biscuits. Lay sideways on sheet and bake another 10-15 minutes to desired degree of crunchiness. Recipe comes from Louise Paglia, who calls them "biscotts," and makes them much softer than store-bought biscotti. Can substitute almond extract. Delicious with coffee.
