Irish Soda Bread

• Ingredients
• flour
• baking powder
• salt
• baking soda
• shortening
• sugar
• 1 egg
• sour cream
• raisins
• caraway seeds
• milk
• Recipe
• Sift together flour, baking powder, soda, and salt. Cream shortening and sugar. Add egg and sour cream. Add to flour mixture. Stir until just blended. Fold in raisins and caraway seeds. Pour into round, greased pan (8"-9" diameter). Smooth all over top by dipping spatula or knife in milk. Make a cross on top with knife. Bake about 1 hour (but usually less). Note: can substitute 1 c. sour cream with 1/2 c. milk.
• Sift together:
• 2¹/₂ cups flour (320g)
• 2 tsps baking powder (10g)
• 1 tsp salt
• ¹/₂ tsp baking soda
• Cream:
• ¹/₄ cup shortening (48g)
• ¹/₂ cup sugar (105g)
• Blend in:
• 1 egg, beaten
• 1¹/₂ cups sour cream (336g)
• Add the flour mixture to the wet ingredients and stir until combined.
• Fold in:
• 1 cup raisins (160g)
• 2 tbsps caraway seeds
• Pour into a greased 8" or 9" pan. To smooth the top, use a spatula whetted with:
• 2 tbsps milk (30g)
• Make a cross on top with a knife. Bake for 45 to 55 minutes, until the top is golden brown and a toothpick comes out clean.
• If you don't have sour cream, you can substitute a half cup of milk for each cup of sour cream required.
