• 4 cups bread crumbs
• 3 cups parmesan cheese (300g), grated
• 7 eggs
• 1 tsp pepper, to taste
• Mix together ingredients to the consistency of a solid dough. Take portions and feed through a bread crumber (or meat grinder) to make 1/2-cm-wide snakes. Add passatelli to either boiling chicken or beef broth. Passatelli are cooked when they come to the top of the broth.
