( 300g) parmesan cheese, grated
pepper, to taste
Mix together ingredients to the consistency of a solid dough. Take portions and feed through a bread crumber (or meat grinder) to make 1/2-cm-wide snakes.
Add passatelli to either boiling chicken or beef broth.
Passatelli are cooked when they come to the top of the broth.
