• In a large bowl, combine:
• 1²/₃ cups flour (213g)
• ¹/₂ tsp salt
• Make a well and set aside. In another bowl, beat together:
• 4 eggs
• 1²/₃ cups milk (400g)
• Divide among 12 popover cups:
• 4 tbsps butter (56g)
• Put the pans in the oven for 30 seconds to melt the butter. Then add the wet ingredients to the dry and mix just until moistened. It's fine if there are a few lumps.
• Divide the batter among the cups. Bake for 15 minutes, then turn down the oven to 350 and bake another 15 minutes.
• Remove the popovers from the pan, stabbing them with a knife to let the steam escape.
