Put a large pot of water on to boil.
In a large bowl, combine:
ricotta cheese, one 16 oz. package
( 273g) flour
Roll the dough into snakes the size of your pinky, then divide into half inch sections with a knife. Use a fork to apply the proper gnocchi shape. Don't make them too big or they won't cook properly.
Add the gnocchi to the boiling water and boil until
