Potato Salad

• Ingredients
• 4 red potatoes
• vidalia onions
• 1 bunch of chives
• olive oil
• white wine vinegar
• salt
• pepper
• fresh basil
• sugar
• dried mint
• Recipe
• Dice and boil until soft:
• 4 red potatoes
• While the potatoes boil, prepare:
• ¹/₂ cup vidalia onion, chopped
• 1 bunch of chives, chopped
• When the potatoes are soft, put them in the refrigerator to chill.
• To make the dressing, whisk together in a medium bowl:
• 4 tbsps olive oil (60g)
• 2 tbsps white wine vinegar (30g)
• ¹/₄ tsp salt
• ¹/₄ tsp pepper
• 1 tbsp fresh basil, chopped
• ¹/₈ tsp sugar
• ¹/₈ tsp dried mint
• Combine all ingredients, toss and serve.
