• Ingredients
• 1 fennel
• carrots
• herbs de Provence
• 1 white beans
• pasta
• chicken
• corn
• Recipe
• In a large, heavy pot, boil 6 cups of water and add bouillon to make broth. "Better Than Boullion" chicken flavor is recommended, but vegetable can be used as well. Once bouillon is dissolved, add:
• 1 fennel, bulb, chopped
• ³/₄ cup carrot, chopped
• 2 tsps herbs de Provence
• Reduce to a simmer and cook, uncovered, until carrots are tender. Then add:
• 1 white beans, can, rinsed
• ¹/₄ cup pasta, small, such as orzo
• 1¹/₂ cups chicken, rotisserie, pre-cooked and shredded
• ³/₄ cup corn, frozen
• Simmer for 11 minutes (or the time listed on the type of pasta you've chosen), until all ingredients are cooked through. You may also pre-warm the chicken in the microwave and serve on the side, if substituting vegetable broth, offering both vegetarian and meat options for this soup. Serve with crusty bread or baked kale chips (which can top the soup like croutons).
