Gluten-free Banana Bread

• 3 bananas
• unsalted butter
• baking soda
• Gluten-free flour
• salt
• sugar
• vanilla extract
• 2 eggs

• 3 bananas, very ripe and mashed
• ¹/₃ cup unsalted butter (75g), melted
• 1 tsp baking soda
• 1¹/₂ cups Gluten-free flour
• ¹/₈ tsp salt
• ³/₄ cup sugar (158g)
• 1 tsp vanilla extract
• 2 eggs, beaten
• Grease a 4 x 8 inch loaf pan.
• In a mixing bowl, mash the bananas until smooth. Add the baking soda to the bananas.
• Stir the melted butter into the banana mixture. Then stir in the sugar, salt, eggs, and vanilla extract.
• Mix in the gluten-free flour. Then pout the batter into the greased loaf pan.
• Bake on the center rack for 50-60 minutes, until a toothpick inserted in the center comes out clean.
• Cool completely before slicing.
