• Ingredients
• butter
• sugar
• milk
• vanilla extract
• flour
• candied cherries
• pecans
• shredded coconut
• Recipe
• In an electric mixer, beat on medium speed:
• ³/₄ cup butter (168g)
• Add and beat until combined:
• ³/₄ cup sugar (158g)
• Beat in until combined, scraping sides of bowl:
• 1 tbsp milk (15g)
• 1 tsp vanilla extract
• Beat in until completely combined
• 2 cups flour (256g)
• Stir in gently:
• ³/₄ cup candied cherry, finely chopped, red or green
• ¹/₃ cup pecan, finely chopped
• Shape dough into two eight inch long rolls, roll in:
• ³/₄ cup shredded coconut
• Wrap in plastic wrap or waxed paper. Chill 2-24 hours
• Cut into 1/4 inch thick slices, place 1 inch apart on an ungreased cookie sheet.
• bake 10-12 minutes or until golden brown on edges.
• Cool on wire rack, let cool. Makes about 60 cookies.
