Dutch Baby

• 3 eggs
• flour
• milk
• sugar
• butter
• powdered sugar
• lemon juice
• Recipe
• Place a cast iron skillet in the oven while it is preheating.
• Combine and blend well:
• 3 eggs
• ³/₄ cup flour (96g)
• ³/₄ cup milk (180g)
• 1 tbsp sugar (13g)
• In the hot skillet, swirl and melt:
• 3 tbsps butter (42g)
• Add the batter and cook for 20 to 25 minutes, until the dutch baby is puffed in the center and golden brown around the edges.
• Move the dutch baby to a cooling rack for 5 minutes to keep the bottom from getting soggy.
• Garnish and serve with:
• 1 tbsp powdered sugar
• 1 tbsp lemon juice (15g), optional
