Slow-Cooker Chicken and Pasta Soup

• 6 chicken thighs
• carrots
• celery
• 1 onion
• 2 garlic cloves
• 2 bay leaves
• sea salt
• pepper
• water
• pasta
• parsley flakes
• Recipe
• In a 5 to 6 quart slow cooker, place:
• 6 chicken thighs, boneless, skinless
• 1¹/₂ cups carrots, about 6 carrots, chopped
• 1¹/₂ cups celery, about 1 bunch, chopped
• 1 onion, halved
• 2 garlic cloves, smashed
• 2 bay leaves
• 1 tsp sea salt
• ¹/₄ tsp pepper
• 6 cups water (792g)
• Cook, covered, until the chicken is cooked through, on high for 5 to 6 hours or on low for 7 to 8 hours.
• 20 minutes before serving, remove the chicken, onion and bay leaves. Turn the slow cooker to high, and add:
• ¹/₂ cup pasta, small rings or the like
• Shred the chicken. When the pasta is cooked, return the chicken to the pot along with:
• 4 tsps parsley flakes
• Serve with crackers or crusty bread.
